Hare – Bhare Baigan : Green Brinjals stuffed with Green Masala

Brinjal is a well known veggie with different colours, shapes and sizes .. there are many variations of this popular vegetable and it cooked in so many different n Delicious ways (recipes) , we like it in all forms sauteed, fried , stuffed or like roasted mash (ie. bharta )..
I have used here green Brinjals for this recipe, Small tender brinjals are stuffed with fresh green masala and simmered on a low heat… you can also use purple or white ones too.

Recipe:—

Ingredients : —

1. small green brinjals – 250 gms .
2. coriander leaves – 2 sprig
3. Green Chillies – 5-6 nos
4. Curry leaves – 2 Sprig s
5. Ginger – grated-1tabsp.
6. Garlic – 8-9cloves.
7. jeera – 1tsp.
8. Rai -1/2tsp.
9. Hing -1tsp.
10. Haldi-1/4tsp.
11. Garam masala – 1/2 tsp
12. Raw mango/amchur – 1 tsp
13. salt -as per taste.
14. sugar- 1/4 tsp (optional)
15. Mustard oil – 2 tbsp

Method :–

1. Select small even sized (round) green brinjals. rinse under cold water.. pat them dry and mark cross slits (×) to the brinjals with a sharp knife to stuff masala in the brinjals, do not cut through

3. Next grind all green leaves, green chillies, ginger, and garlic in a thick paste ..

4. Now add raw mango pieces or amchur, garam masala , salt and a little bit of sugar (optional) in the same mixing jar and grind all in to a rough paste. Try to not use water during grinding.

5. Take out it in a bowl and after that stuff this masala into the cuts of the brinjals.. keep them covered and rest for ten minutes.

6. In the meantime heat mustard oil in the pan. make tadka of hing, jeera and rai , saute for few seconds..

7. Now add stuffed brinjals in to it .fry for 2 minutes, then add very little water to cook , cover with a lid and cook on low heat , turn them inbetween to cook evenly from all sides.

8. After 8 to 10 minutes they will be become soft .. open the lid and check them, if you find some rawness in the brinjal cook them further few minutes more.

9. Finally turn off the flame .. now your stuffed brinjals with green masala are ready to serve .. you can serve them with Roti, rice or Parathas as a side dish.. Enjoy.. 😋🍆👌
